Soda bread
Soda bread is a whole grain fast bread
Ingredients
- 2.5 cups (276g) King Arthur Irish-Style Flour
- 1.25 cups (150g) bread flour
- 2 tablespoons sugar or honey
- 1 teaspoon baking soda
- 0.75 teaspoon table salt
- 4 tablespoons butter, melted
- 1.33 cups (302g) buttermilk
- 1 large egg
Directions
- Preheat the oven to 400°F. Lightly grease an 8” cast iron skillet.
- Whisk together the dry ingredients.
- Whisk together the buttermilk, egg, and melted butter.
- Mix dry and wet ingredients. Dough will be stiff, but shouldn’t be crumbly. Add a tablespoon or two of buttermilk if it’s crumbly until it becomes cohesive.
- Knead a little. Shape and flatten into the skillet, then score deeply across the loaf.
- Bake 45 minutes or so.
Notes
- Stores for a couple days. Doesn’t slice well, but does cut into slices well.
