Soda bread

Soda bread is a whole grain fast bread

Ingredients

  • 2.5 cups (276g) King Arthur Irish-Style Flour
  • 1.25 cups (150g) bread flour
  • 2 tablespoons sugar or honey
  • 1 teaspoon baking soda
  • 0.75 teaspoon table salt
  • 4 tablespoons butter, melted
  • 1.33 cups (302g) buttermilk
  • 1 large egg

Directions

  1. Preheat the oven to 400°F. Lightly grease an 8” cast iron skillet.
  2. Whisk together the dry ingredients.
  3. Whisk together the buttermilk, egg, and melted butter.
  4. Mix dry and wet ingredients. Dough will be stiff, but shouldn’t be crumbly. Add a tablespoon or two of buttermilk if it’s crumbly until it becomes cohesive.
  5. Knead a little. Shape and flatten into the skillet, then score deeply across the loaf.
  6. Bake 45 minutes or so.

Notes

  • Stores for a couple days. Doesn’t slice well, but does cut into slices well.
