Brown sugar chicken
- 2 tablespoons brown sugar
- 1 tablespoon paprika
- 2 teaspoons onion powder
- 1.5 teaspoons salt
- 1 teaspoon chili powder
Adobo
- 3 Tbsp table salt
- 1 Tbsp onion powder
- 1 Tbsp roasted garlic powder
- 1 Tbsp ground black pepper
- 1 tsp dried oregano
- 0.5 tsp chipotle chili powder
- 0.5 tsp cumin
Everything bagel
- 0.25 cup sesame seeds
- 4 tsp sea salt flakes
- 1 tsp dried minced garlic
- 2 Tbsp dried minced onion
- 1 Tbsp black sesame seeds
- 3 Tbsp poppy seeds
Mulling spices
- 5 tbsp ground cinnamon
- 1.5 tbsp ground cloves
- 1 tsp ground allspice
- 1 tsp ground cardamom
- 1 tsp ground ginger
- 0.75 tsp ground aniseed
- 0.5 tsp ground mace
Brisket rub
- 0.25 cups coarsely ground black pepper
- 0.25 cups kosher salt
- 0.25 cups dried minced onion
- 1 Tbsp roasted garlic powder
- 0.75 tsp prague powder (optional)
- a couple drops of liquid smoke (optional, add right before cooking if using sous vide)
Za’atar
Equal parts, ground with a mortar and pestle, of
- dried thyme
- dried sumac
- roasted sesame seeds
Cajun
- 0.25 cup table salt
- 0.25 cup roasted garlic powder
- 0.25 cup finely ground black pepper
- 2 tablespoons paprika
- 2 tablespoons onion powder
- 2 tablespoons finely ground white pepper
- 1 tablespoon celery salt
- 0.5 tablespoon cayenne pepper (adjust to taste, this is “for kids” spicy)
Pumpkin pie
- 4 teaspoon ground cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon allspice
Also goes well as a simple syrup or sugar blend for topping baked stuff or coffee
Prime rib rub
- 1 tablespoon black peppercorns, coarsely ground
- 1 tablespoon green peppercorns, coarsely ground
- 1 tablespoon pink peppercorns, coarsely ground
- 1 tablespoons dried celery seeds
- 2 tablespoons dried garlic powder
- 1 tablespoon crushed and dried rosemary
Rub the prime rib with a bunch of kosher salt, then add this on before putting in the sous vide bag. Alternatively, also use an egg white or two before roasting in the oven.
Fried chicken
- 1.5 tsp ground red pepper
- 1.5 tsp ground chipotle chile pepper
- 1.5 tsp garlic powder
- 1.5 tsp dried crushed red pepper
- 1.5 tsp ground black pepper
- 0.75 tsp salt
- 0.5 tsp paprika
Wild rice
- 1 tsp marjoram
- 1 tsp chives
- 0.5 tsp thyme
- 0.5 tsp savory
- black pepper and salt, to taste
Use with strong broth (vegetable or chicken) and a flavorful fat (butter, extra virgin olive oil, rendered animal fat) for wild rice pilaf.
BBQ pulled pork
- 4 tbsp dark brown sugar
- 1 tbsp paprika
- 2 tsp table salt (double for Kosher salt)
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp freshly ground black pepper
- 0.5 tsp ground fennel seed
- 0.25 tsp ground chipotle chili pepper, optional
