Pie crust
Simple crust for most pies
Ingredients
- 1.5 cups flour
- 8 tbsp unsalted butter
- 1 egg
- 1 tbsp white wine vinegar
- 2 tbsp water
- 0.25 tsp salt
Directions
- Cut cold butter into small cubes and work into flour and salt mixture.
- Work in egg, vinegar, and water. Work quickly so as to keep the mixture cold.
- Roll as much or as little as you’d like.

- Makes one 9” pie crust
- Variations
- savory herbs = an extra 0.25 tsp salt, 1 tsp thyme, 0.25 tsp savory, 0.25 tsp marjoram
- use lard or rendered animal fat instead of butter
- fall spice = cider vinegar instead of wine, 0.5 tsp cinnamon, 0.25 tsp nutmeg, 0.25 tsp cloves
- Unless it really matters that the crust is flaky, I just pulse everything together in a food processor before rolling - like a barbarian. It’s still very tasty. 🤷🏻♀️
