Buttermilk fried chicken bites
The deep fryer comes out of the pantry about once a year and this is why. 🍗
Ingredients
- 1.5 tsp ground red pepper
- 1.5 tsp ground chipotle chile pepper
- 1.5 tsp garlic powder
- 1.5 tsp dried crushed red pepper
- 1.5 tsp ground black pepper
- 0.75 tsp salt
- 0.5 tsp paprika
- 2 lbs chicken breasts, skinned and boned
- 2 cups buttermilk
- 0.75 cup plain bread crumbs
- 1 cup all-purpose flour
- peanut oil or vegetable oil
- blue cheese or honey mustard dressing
Directions
- Combine the 7 spices and reserve half the mixture. Cut the chicken into 1-inch pieces. Place chicken in a bowl with half of the spice mixture. Toss until covered. Pour 2 cups of buttermilk in, cover and chill for 24 hours.
- Mix half the spice mixture, bread crumbs, and flour together. Remove chicken pieces, discard buttermilk. Dredge chicken in breadcrumb mixture.
- Heat oil to 350°F. Fry chicken until done.
Notes
- If the spice mix is made ahead, use 4.5 tsp of the mix for each half.
