Enchilada sauce
Ingredients
- 2 Tbsp bacon fat
- 2 Tbsp all-purpose flour
- 1.5 Tbsp chili powder
- 1.5 cups water
- 1 can (6 oz.) tomato paste
- 0.5 tsp cumin
- 0.5 tsp garlic powder
- 0.25 tsp ancho chili pepper
- 0.25 tsp chipotle chili pepper
- 0.75 tsp salt
Directions
- Make a roux with the bacon fat and flour in a small pot. Whisk in the chili powders and heat until it bubbles.
- Stir in the tomato paste, water, and the rest of the spices.
- Simmer until it reaches the consistency you want. Salt to taste.
Notes
- This is super mild for kids. Double the ancho and chipotle chili powder and add 0.25 to 0.5 tsp of cayenne pepper to make it more spicy.
- To make vegan (or if you don’t have bacon fat on hand), use vegetable oil and an optional couple drops liquid smoke.
