Rice pilaf

Simple rice pilaf is an easy side dish

Ingredients

  • 3 cups double strength chicken stock
  • 1 tablespoon butter
  • 1 cup basmati rice
  • 0.25 cup orzo
  • 0.25 cup minced fresh onion
  • 1.5 tsp minced garlic
  • 0.25 tsp ground mustard
  • 1 tsp ground savory

Directions

  1. Melt the butter in a saucepan over medium low heat.  Add the orzo and toast until the orzo is a nice auburn and the butter has browned.  Remove orzo from the pan and set aside.
  2. Add minced onion and saute until translucent.  Add garlic and continue to saute for about another 30 seconds.
  3. Add stock to the pan slowly, scraping up the fond.  Then finish adding stock, rice, and seasonings.
  4. Bring to boil, then cover and cook on low for 15 minutes.
  5. Add orzo, then cover and cook until done, about another 10 minutes.

Notes

  • Tons of veggies go great stirred in. Peas, tiny carrot bits, basically anything crunchy.
  • Same for lentils.
  • Also for chopped nuts.
