Easy breakfasts made in advance, tons of variations.


  • 1 pie crust
  • 4 eggs
  • 1 cup half and half
  • 1 cup cheese, shredded or crumbled
  • (mix ins, see notes)
  • Salt and pepper, to taste


  1. Preheat oven to 350°F.
  2. Mix 4 eggs, half and half, and salt and pepper. Set aside.
  3. Put cheese and any other mix-ins into pie crust.
  4. Pour egg mixture into pie crust.
  5. Bake 40-50 minutes, until toothpick comes out clean.


  • No need to be picky about the pie crust, pre-made is fine. Non-flaky crusts work well too.
  • Variations include
    • bacon, breakfast sausage, or chorizo
    • spinach and feta
    • everything bagel seasoning and cream cheese (instead of shredded cheese)
    • no meat, extra cheese!
    • fresh spring herbs (chives, chervil, parsley, tarragon, etc.)
    • caramelized onions
    • fresh onions and bell peppers
