Pie crust

Simple crust for most pies

Ingredients

  • 1.5 cups flour
  • 8 tbsp unsalted butter
  • 1 egg
  • 1 tbsp white wine vinegar
  • 2 tbsp water
  • 0.25 tsp salt

Directions

  1. Cut cold butter into small cubes and work into flour and salt mixture.
  2. Work in egg, vinegar, and water. Work quickly so as to keep the mixture cold.
  3. Roll as much or as little as you’d like.

Notes

  • Makes one 9” pie crust
  • Variations
    • savory herbs = an extra 0.25 tsp salt, 1 tsp thyme, 0.25 tsp savory, 0.25 tsp marjoram
    • use lard or rendered animal fat instead of butter
    • fall spice = cider vinegar instead of wine, 0.5 tsp cinnamon, 0.25 tsp nutmeg, 0.25 tsp cloves
  • Unless it really matters that the crust is flaky, I just pulse everything together in a food processor before rolling - like a barbarian. It’s still very tasty. 🤷🏻‍♀️
