Hudson Bay bread

Hudson Bay Bread is a year-round favorite, serving as the basis of a high-energy lunch or snack.

Ingredients

  • 1.5 pounds margarine or butter 4 cups sugar
  • 0.67 cup corn syrup
  • 0.67 cup honey
  • 2 teaspoons maple flavoring
  • 1.5 cups ground nuts
  • 19 cups oatmeal

Directions

  1. Start by mixing together the first five ingredients.
  2. Mix in the nuts and oatmeal.
  3. Spread the mixture in a large sheet pan. Press it down into the pan.
  4. Bake at 325°F in a convection (wind) oven for 15 to 18 minutes.
  5. As soon as the bread is taken from the oven, use a spatual to press it down (to keep it from crumbling).
  6. Cut the bread while it is still warm.

Notes

  • For home preparation, cut the recipe at least in half.
  • A conventional oven requires a longer baking time than convection, time may need adjusting.
