Buttermilk fried chicken bites

The deep fryer comes out of the pantry about once a year and this is why. 🍗

Ingredients

  • 1.5 tsp ground red pepper
  • 1.5 tsp ground chipotle chile pepper
  • 1.5 tsp garlic powder
  • 1.5 tsp dried crushed red pepper
  • 1.5 tsp ground black pepper
  • 0.75 tsp salt
  • 0.5 tsp paprika
  • 2 lbs chicken breasts, skinned and boned
  • 2 cups buttermilk
  • 0.75 cup plain bread crumbs
  • 1 cup all-purpose flour
  • peanut oil or vegetable oil
  • blue cheese or honey mustard dressing

Directions

  1. Combine the 7 spices and reserve half the mixture. Cut the chicken into 1-inch pieces. Place chicken in a bowl with half of the spice mixture. Toss until covered. Pour 2 cups of buttermilk in, cover and chill for 24 hours.
  2. Mix half the spice mixture, bread crumbs, and flour together. Remove chicken pieces, discard buttermilk. Dredge chicken in breadcrumb mixture.
  3. Heat oil to 350°F. Fry chicken until done.

Notes

  • If the spice mix is made ahead, use 4.5 tsp of the mix for each half.
