Enchilada sauce


  • 2 Tbsp bacon fat
  • 2 Tbsp all-purpose flour
  • 1.5 Tbsp chili powder
  • 1.5 cups water
  • 1 can (6 oz.) tomato paste
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp ancho chili pepper
  • 0.25 tsp chipotle chili pepper
  • 0.75 tsp salt


  1. Make a roux with the bacon fat and flour in a small pot. Whisk in the chili powders and heat until it bubbles.
  2. Stir in the tomato paste, water, and the rest of the spices.
  3. Simmer until it reaches the consistency you want. Salt to taste.


  • This is super mild for kids. Double the ancho and chipotle chili powder and add 0.25 to 0.5 tsp of cayenne pepper to make it more spicy.
  • To make vegan (or if you don’t have bacon fat on hand), use vegetable oil and an optional couple drops liquid smoke.
