Compound butter mixes

Shortcut to lots of flavors in anything you make with butter 🧈

Orange honey

  • 1 stick of unsalted butter
  • 1 tbsp honey
  • 2 tsp finely grated orange zest

Chives

  • 1 stick of unsalted butter
  • 0.25 cups of finely chopped fresh chives

Fresh herbs

  • 1 stick of unsalted butter
  • 2 tbsp freshly chopped herbs (thyme, rosemary, parsley, etc)
  • 0.5 tsp salt
  • 0.5 tsp ground pepper

Cinnamon maple

  • 1 stick of unsalted butter
  • 1 tbsp pure maple syrup
  • 0.75 tsp ground cinnamon

Jerk

  • 1 tablespoon roasted and chopped garlic
  • 2 to 3 teaspoons cayenne pepper
  • 2 teaspoons onion powder
  • 2 teaspoons thyme
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 1 teaspoon ground allspice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon crushed red pepper flakes
  • 0.5 pound softened butter (2 sticks)

Paprika

  • 1 stick of unsalted butter
  • 1 tbsp fresh rosemary, minced
  • 1 tsp smoked paprika
  • 0.5 tsp salt

Harissa

  • 0.5 stick of unsalted butter
  • 0.25 cup fresh mint, chopped
  • 3 tbsp harissa paste
  • 1 tsp salt

Thai

  • 0.5 stick of unsalted butter
  • 0.25 cup chopped fresh basil (Thai basil if available)
  • 1 tbsp freshly grated ginger
  • 2 serrano chiles, seeded and finely chopped
  • 1 tsp lime zest
  • 1 tsp salt

Porcini mushroom

  • 1 stick of unsalted butter
  • 2 tbsp finely chopped dried porcini mushrooms
  • 1 tbsp red wine
  • Salt to taste

Turkish

  • 0.5 stick of unsalted butter
  • 1.5 tsp hot smoked Spanish paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp ground allspice

Indian

  • 0.5 stick of unsalted butter
  • 1 tsp salt
  • 1 tsp ground cumin
  • 0.5 tsp ground turmeric
  • 0.5 tsp ground coriander
  • 0.5 tsp black pepper
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground cardamom

Chipotle lime

  • 1 stick of unsalted butter
  • 1 canned chipotle chile in adobo, finely chopped
  • 1 tsp fresh lime zest
  • Salt to taste

Ramps

  • 1.5 pounds ramps (trimmed, cleaned, blanched for 30s, and thinly sliced)
  • 4 pounds unsalted butter, cut up and at room temperature
  • 2 lemons, zested and juiced
  • Salt and pepper to taste
  • Thyme (optional)

Steakhouse

  • 1 stick of unsalted butter
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp fresh rosemary
  • 1 tbsp minced garlic

Hibachi garlic

  • 2 sticks of butter
  • Hella garlic, like 3-4 whole bulbs
  • 0.5 cup whipping cream
  • Soy sauce
