Christmas pecans

Nana Raven’s handwritten recipe for the spiced pecans she’d make at Christmas


  • 8 cups pecans, halved
  • 1 egg white
  • 0.75 cup sugar
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.25 teaspoon clove
  • 0.25 teaspoon allspice
  • 0.25 teaspoon salt


  1. Mix altogether and add pecans.
  2. Bake at 250°F for 55 minutes.


  • I’ve made this one - the spices used are all ground, not whole. I’ve found it helpful to whisk the spices into the egg white slowly, then fold the pecans in gently to keep them in big halves. I bake them on a cookie sheet and separate them so as to not have a giant pecan clump.
