Banana pancakes

One more way to use up brown bananas - it’s pancakes!

Ingredients

  • 2 very ripe large bananas
  • 1 cup milk (preferably whole milk)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 3 tablespoons packed light brown sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground clove
  • 0.25 teaspoon kosher salt
  • Butter or canola oil spray for the skillet

Toppings or mix-ins

  • maple syrup
  • chopped walnuts or pecans
  • sliced banana
  • chocolate chips
  • whipped cream

Instructions

  1. Smash the bananas in a big bowl until smooth.
  2. Add the rest of the wet ingredients and whisk until well combined.
  3. Add the dry ingredients - flour, sugar, baking powder, and seasonings. Stir until smooth and uniform.
  4. Stir in nuts or chocolate chips, if using.
  5. Cook, using roughly a quarter cup of batter to each pancake.

Notes

  • Cooked pancakes keep well for a few days, freeze well
  • Batter lends itself to small pancakes
