Banana pancakes
One more way to use up brown bananas - it’s pancakes!
Ingredients
- 2 very ripe large bananas
- 1 cup milk (preferably whole milk)
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 3 tablespoons packed light brown sugar
- 2 teaspoons baking powder
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon ground nutmeg
- 0.25 teaspoon ground clove
- 0.25 teaspoon kosher salt
- Butter or canola oil spray for the skillet
Toppings or mix-ins
- maple syrup
- chopped walnuts or pecans
- sliced banana
- chocolate chips
- whipped cream
Instructions
- Smash the bananas in a big bowl until smooth.
- Add the rest of the wet ingredients and whisk until well combined.
- Add the dry ingredients - flour, sugar, baking powder, and seasonings. Stir until smooth and uniform.
- Stir in nuts or chocolate chips, if using.
- Cook, using roughly a quarter cup of batter to each pancake.
Notes
- Cooked pancakes keep well for a few days, freeze well
- Batter lends itself to small pancakes
